PARIS COOKBOOK FAIR ON THE COVER OF PUBLISHERS WEEKLY

As the Paris Cookbook Fair gets underway next month, cookbook publishers are getting ready to do some shopping—and not just the sort that involves stocking up on Dijon mustard and bonbons from Fauchon. "Foreign rights have always been a major activity for big fiction books," says Edouard Cointreau, president of the fair. "Now they are becoming a key to the business of smaller publishers and authors.... [They may] be small deals, but you cannot ignore the total income they generate. Small streams make big rivers."

The Paris Cookbook Fair is already sold out of exhibit space, and twice the number of rights center tables as last year have booked. It's clear that the global cookbook market is growing. What used to be a buffet of small side dishes is actually starting to amount to a real meal.

CHEFS ARE BRANDS

Press Release January 5, 2010

New Year lists of the top celebrity chefs in the world,
compared with world famous brands.

 

Today brands are built mostly through television. Few brands get as much television exposure as celebrity chefs. This allows chefs to be built up even without a restaurant, and those who do have a restaurant realize quickly there is much more in television, sponsorships, and cookbooks. For the Paris Cookbook Fair, February 12-15, a list of the international celebrity chefs compared to brands and famous people has been prepared. The numbers are taken from the article traffic statistics of Wikipedia in English in December 2009. Anyone can do the same:

According to Jimmy Wales, founder of Wikipedia, more than 340 million people use Wikipedia every month. This is the audience of  a third of the internet connected world every month. It is free, you can use the information in Wikipedia in any way you want. It is free of charge, free of advertising, spreading knowledge everywhere, and keeps growing. It is supported entirely by donations. Its mission is to give free access to the sum of all human knowledge.

Wikipedia is in fact the most gigantic poll ever dreamed by politicians, corporations or the media. The data can be used by brands in their marketing research, at no cost, except maybe welcomed donations. The most intriguing results of the lists compiled for the Paris Cookbook Fair is that they confirm in general the rankings in other sector studies and polls. The question is to compare now apples and oranges, politicians, brands, chefs, generic products, with everything else in the 3.140.000 articles in English.

1ère édition du Paris Cookbook Festival

Paris, capitale culturelle et gourmande, célèbre l’édition culinaire internationale du 12 au 15 février 2010 au CentQuatre. 

Paris Cookbook Festival réunit pour la première fois à Paris plus de 200 éditeurs de livres de cuisine et du vin, venus du monde entier pour présenter leurs ouvrages aux professionnels et au grand public. 

Pendant 4 jours, auteurs, libraires, chefs de cuisine, producteurs de vins et gourmets de tous horizons partageront leurs passions à l’occasion de cet évènement festif, où le plaisir des sens rejoint le goût des mots. 

La « Première » d’un évènement international annuel

Imaginé par Edouard Cointreau, créateur des Gourmand World Cookbook Awards, Paris Cookbook Festival est le nouveau rendezvous de l’édition culinaire. La manifestation convie du 12 au 15 février 2010 les professionnels et le grand public à découvrir les ouvrages concoctés par des éditeurs du monde entier, qui ont fait du livre de cuisine et du vin leur spécialité. Chine, Russie, Inde, Malaisie, Mexique, Brésil, Liban, Maroc, Canada, EtatsUnis… pour cette première édition, plus de 40 nationalités seront présentes. L’occasion de découvrir l’éclectisme et la richesse des productions, les sources d’expressions et les thèmes d’inspiration des différents pays.

Un lieu bouillonnant de rencontres et d’échanges

Paris, capitale connue pour son meltingpot culturel, sa vie intellectuelle et artistique, accueille cette manifestation cosmopolite et gastronomique haute en couleurs. A l’instar de la Ville, Paris Cookbook Festival se veut un lieu d’échanges vifs et pétillants autour de l’édition culinaire, qui connaît un succès croissant en France et à l’étranger. Objectifs : créer des regards croisés sur les tendances du marché, la transmission des saveurs et des savoirs partout dans le monde, apprécier les innovations de ce secteur friand de nouveautés (coffrets, polars, BD…), confronter les univers créatifs et stimuler les discussions sur des sujets d’actualités, parfois polémiques, comme la cuisine moléculaire ou les vins ditsnaturels. 

Au menu : un festin de livres gargantuesque

L’évènement se déroulera au CentQuatre, un vaste espace artistique situé dans le 19è arrondissement, qui invite à dépasser certaines frontières parisiennes. Dans ce lieu impressionnant, plus de 4000 ouvrages seront proposés à la gourmandise des visiteurs. Des animations culturelles ponctueront également la manifestation. Programme des réjouissances : conférences, tablesrondes avec des grands chefs, des journalistes et des personnalités de la gastronomie, rencontres et dédicaces d’auteurs, démonstrations culinaires, dégustations de vins.... Déroulé et cerises sur le gâteau

  • Le jeudi 11 février, la remise des Prix des Gourmand World Cookbook Awards inaugurera le festival. Depuis 15 ans, cette cérémonie glamour, très attendue, prime les meilleurs livres de cuisine et du vin publiés sur la scène internationale, en récompensant notamment de nombreux indépendants.
  • Du vendredi 12 au lundi 15 février, place au festival ! Un rendezvous professionnel autour d’un Centre de droits internationaux et de stands permettant aux agents, éditeurs et écrivains de valoriser leur production, négocier des droits, développer des coéditions et des partenariats.
  • Ouvert au grand public les samedi 13 et dimanche 14 février. En plein SaintValentin, les amoureux de mots et de mets pourront assouvir pleinement leur passion, déclarer leur flamme avec des livres évoquant dîners en tête à têtes, invitations pimentées, recettes croustillantes ou délices d’ailleurs.

Côté cuisine 

Des shows culinaires organisés dans deux grandes cuisines aménagées, l’une pour les chefs internationaux, l’autre pour les chefs francophones.
Des conférences sur des questions liées à l’édition culinaire : Comment trouver un éditeur de livre de cuisine ? Quelles seront les tendances de demain ? Comment négocier un contrat et vendre ses droits à l’étranger ?
Des rencontres avec des professionnels autour de leurs métiers : éditeurs et libraires spécialisés dans la cuisine et le vin, stylistes et photographes culinaires.

Des rencontres dégustations avec des vignerons-auteurs et les plus grands propriétaires de vignobles.
Un parcours de dégustation, le Pentathlon du Vin, organisé par des sommeliers argentins.
Des tables rondes sur les enjeux géo-politiques qui orchestrent le monde du vin.
Des ateliers sur les tendances de l’édition mondiale du vin.
Un grand bar central avec wine tastings réguliers.

China Food Television présentera durant lefestival les 25 programmes produits par Gourmand Television sur les grands vins expliqués aux Chinois. Un film sera également réalisé, mettant en scène les personnalités du vin présentes au Paris Cookbook Festival.

On July 1, 2009, at the previous Awards event at La Comédie Française, there were 25% from outside Europe. At Le Cent Quatre the decrease in North America andSouthern Europe is more than compensated by the increase in Asia, Latin America and Northern Europe.

-The “Best in the World” winners receive a trophy specially designed by Swarowski for Gourmand.

Nearly all the big French cookbook publishers are present : Marabout, Hachette Pratique, Le Chêne, Larousse, First, Flammarion, Alain Ducasse Publishing, Glénat, Minerva, as well as numerous small ones.

This is very positive and unexpected as some of the big ones and many of the small ones announced months ago they were not going to the traditional Salon du Livre de Paris in 2010, which created a public controversy.

Everyday Harumi: Simple japanese food for family and friends

Harumi Kurihara is respected world wide as the First Lady of Japanese Cookery. Her natural elegance and style help television viewersappreciate Japanese food culture. Her experience is unique in bringing Japanese food into the homes of not only Japanese audiences, but through her English language cookery shows, also to Western audiences; explaining in detail how anyone can cook Japanese at home.

This award will be given on Thursday February 11, 2010 at the Gourmand Awards Best in the World event in Paris.

In a fast seven years, J amie Oliver has reinvented food programming. His production company Fresh One has become a leader in the sector, with most interesting and positive plans for the future. His inspiring vision for television production takes into account fundamental social and ethical values, as well as the best techniques and format.

Jamie Oliver has managed to bring together top talent: Roy Ackerman, Zoe Collins, J o Ralling and the rest of his team are highly respected in the television sector.

This Award was shared last year by MICO of Japan, producer of food shows for NHK, and by Canal Micro of Spain.
The Award will be given on Thursday February 11, 2010 at the Gourmand
Awards “Best in the World” event, in Paris.

It takes place at le Cent Quatre the new artistic center of the city of Paris the day before the Paris Cookbook Fair opens in the same location.

CHEF WAN BECOMES "DATUK CHEF WAN"

Chef Wan is conferred by the King of Malaysia on February 1 the title “Datuk” at a special ceremony by the Royal Palace. It was televised live for two hours. He received the title for his hard work for 25 years as Culinary Ambassador of Malaysia. His name now is different. Datuk is part of the name, like “Sir” in Great Britain, People will need to address him as Datuk Chef Wan, or just call him Datuk.

Dutuk Chef Wan received last year at La Comédie Française in Paris the Gourmand Award for “Best Celebrity Chef in the World”. He has performed in over 6000 television shows, 12 films, and 3 theatre plays. He will be present at Paris Cookbook Fair , February 12 to 15, 2010.

This year the “Best Celebrity Chef in the World” is Harumi Kurihara, from Japan, who will also be present at Paris Cookbook Fair.

QUINO PRESENTS HIS DRAWINGS AT THE LE CENTQUATRE

During one of his countless round trips between Buenos Aires and Paris, Quino will present his exhibition at Le Centquatre. Everybody knows him as an hedonist without complacency. At the Paris Cookbook Fair, you will discover his vision of gastronomy. Sometimes tender like his love of a good table and a great wine, sometimes skeptical considering the smiles of a Maître d’Hôtel, and often very critical towards the industrial and commercial drifts of food. At the Opera, in a great restaurant or at the bottom of a shantytown, the characters’ adventures merge for creating a true Odyssey of table, with some heroes and many traitors. The drawings presented at the exhibition are from "La Aventura de Comer", published by Daniel Divinsky at Ediciones de la Flor, in Argentina. On July 1st, at La Comédie-Française, "La Aventura de Comer" received the Gourmand World Cookbook Award for to the best illustrations. The theatre and its public coming from forty seven countries will never forget the ovation for Quino. An unforgettable moment.

ALBERTO BALI CREATES THE POSTER OF THE PARIS COOKBOOK FAIR

Born in Buenos Aires, Argentina, Alberto Bali lives in Paris since 1976.

Painter, architect, graphic designer, sculptor, decorator, designer...a retrospective of his works could fill a museum. His paintings are tributes to the cities he explores, with an impressive collection on Paris, Buenos Aires, London and Hong Kong, among others.

In Paris, Alain Dutournier and Joël Robuchon have requested his work as a designer, and you can admire the result while dining at Le Carré des Feuillants.

A poster by Bali has always something special. Some years ago, he was chosen as one of the 45 top poster artists in the world to create an image for La Gitane. Two of the most loved Willi’s Wine Bar’s posters are also by Bali.

CULINARY MASTER-CLASS BY MICHEL TROISGROS AT THE PARIS COOKBOOK FAIR

Michel Troisgros is the owner of La Maison Troisgros, in Roanne. The restaurant has been awarded Three Michelin stars since 1968 and was named the Best French restaurant in the world by Gault Millau.

A DREAM COME TRUE!!

The trade in foreign rights for food and wine books was equal or better at Paris Cookbook Fair than at the latest Frankfurt Book Fair or London Book Fair. In spite of very bad weather, it was a success, because of Paris, the beautiful Le Cent Quatre venue, a professional organization, many foreign visitors and exhibitors, and the style of the “Gourmand Family”.

The Exhibitors
One exhibitor said he did better business February 12-15, 2010 at Paris Cookbook Fair than at Frankfurt and London Book Fairs combined. The trade in foreign rights was beyond expectations, including unexpected combinations such as Colombia selling to Korea, or first time self published books entering in serious negotiations with Hachette or Phaidon.
The trade was balanced between buyers and sellers, with an unexpectedly high numbers of buyers of foreign rights. The cookbook market is very healthy.

The Visitors
Paris proved once again it is a magnet for food and wine visitors.
In total, there were 3123 trade visitors, a large number for a sector which is a small section of the book business. Each visitor was counted only once, even if they repeated on various days. They were two thirds foreigners, and one third french. This shows there was a real need to bring together at the Paris Cookbook Fair  the international market for food and wine books.
Most of the visitors were publishers and authors. There were more booksellers than expected for this first event, from France, Europe,  and from as far as Canada (Vancouver, Quebec) or Australia. Several big international  distributors and printers were very happy that did come.
The level of serious business felt more like a third year than a first year!

The Weather
The February date was chosen to be the first book event after the end of the year, after the big sales for cookbooks and wine books. Projects started at Paris Cookbook Fair can be ready for the end of the year.

However, this has been a cold winter, with snow storms in North America and Europe the two days before the Paris Cookbook Fair.
The weather was colder than expected in Paris and within Le Cent Quatre building. This kept many Parisians at home, and we had less visitors from the general public than planned.
We might move the dates a few weeks later next year!

The Future
We already have most exhibitors confirming they will come back next year, some wanting to increase substantially the surface of their stands.
We still stay at Le Cent Quatre, the most beautiful place for exhibitors in Paris when there is sun. As one foreign visitor said “it is a very special building, with a soul”.
The layout will stay basically the same, with a few improvements, learning from this year’s experience. The conferences will be in smaller rooms. We will keep two show kitchens, one international, the other french. We will increase wine tastings, which were very successful.
Our daily Gourmand Magazine will be increased in pages, and  probably translated from English to other languages.

Summary
A success beyond expectations for nearly all participants, in spite of the weather.
It was great for business.
It was a happy and elegant event, in which all can be proud of having participated.

UN SALON QUI AGITE LE MONDE DE L'ÉDITION

Pourquoi ce salon agite-t-il le monde de l’édition?

Désormais, Paris est au livre de cuisine ce que Francfort est à l’édition: le centre mondial des droits internationaux. Ainsi, la quantité de traductions négociées au Cookbook Festival a dépassé toutes les prévisions, et les résultats commenceront à paraître en librairie dès Noël 2010.

L’ouverture sur l’international

La bonne santé du livre de cuisine fait l’objet d’articles dans le monde entier. Pourtant, certains pays ont tendance à se renfermer sur leur propre production, parfois par manque d’intérêt pour l’étranger, parfois par absence de contacts, parfois par surcharge de travail chez les éditeurs.
Les principaux acteurs du secteur ont rencontré sur ce salon leurs homologues étrangers, avec notamment une intense activité des Chinois, des Italiens, des Russes, des Allemands et des Coréens. L’année prochaine, la présence américaine et britannique sera renforcée.

 

 

Le dynamisme des grands éditeurs

Pendant que certains arrivaient à des accords inattendus en termes de coopération éditoriale, d’autres réservaient une surface trois fois supérieure pour l’année prochaine, un très grand éditeur anglais posait son regard sur chaque ouvrage exposé au centre de droits et la directrice d’une grande maison allemande assistait à une démonstration culinaire de son futur auteur.

 

 

Reconnaissance et distribution des indépendants

Alors que leur créativité mériterait une meilleure exposition, les indépendants sont trop souvent relégués derrière les grands groupes. Les distributeurs ont d’ailleurs compris le pouvoir des indépendants dans le secteur du livre de cuisine. Certains éditeurs ont, après le salon, le choix entre plusieurs propositions de distributeurs.

 

 

Honneur à l’auto-édition

Ces dernières années ont vu fleurir une quantité remarquable de très bons ouvrages auto-édités. En dehors du budget, l’auteur n’a aucune contrainte pour la réalisation de son livre. Par contre, la visibilité et la distribution restent marginales, selon les efforts de l’auteur.
Au Cookbook Festival, les ouvrages auto-édités ont le même statut et la même vitrine que les autres: citons par exemple ce responsable du magasin Louis Vuitton sur les Champs-Élysées quittant le salon avec trois caisses d’un livre écrit et publié par une mère et sa fille.

 

 

Le numérique?

Si les pionniers du livre de cuisine numérique des États-Unis et d’Angleterre étaient présents, c’est dans les livres sur le vin qu’une surprise conceptuelle est apparue. Un des plus grands spécialistes mondiaux sur le vin français a présenté la version digitale de son ouvrage de référence, en assumant volontiers les possibles piratages. “Laissez les jeunes partager mon livre, ils feront mon marketing” suggère-t-il en riant.

 

 

La place de l’auteur

De nos jours, l’auteur est assez peu reconnu. En dehors des grands chefs et des personnalités médiatiques, les plumes restent souvent anonymes et reçoivent un traîtement indigne de leur travail. Il faut inverser cette tendance qui ferait des auteurs les redevables de leurs éditeurs.

Un réseau convivial, polyglotte et hédoniste

La clef du succès de ce salon est la mise en relation des éditeurs entre eux. Depuis des années, l’équipe de Gourmand International est habituée à présenter les Japonais aux Argentins, les Français aux Anglais, les chefs aux éditeurs, les photographes aux journalistes, etc. Parvenir à créer cette convivialité demande une grande curiosité et un appétit certain pour les différentes cultures.

En 2011, chacun pourra prendre part à cette convivialité, et en tirer ses propres bénéfices.
